Party Sandwiches
When I was a child, my mom used to make these little cocktail sandwiches for happy hour “mixers” and special occasions like New Year’s Eve. I would help her prepare them, and she always shared the adult appetizers with us kids.
They are every bit as good as I remember, though I have taken the liberty of spicing them up just a bit. For an even spicier version, omit the ground beef and double the amount of Italian sausage.
Ingredients
1/2 pound spicy Italian sausage
1/2 pound ground beef
1/2 pound Velveeta cheese
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
cocktail rye bread
Instructions
Brown sausage and ground beef in a skillet. Drain away any excess fat. Cut the Velveeta in to 1-inch cubes and stir into the meat mixture while it it still warm. Add spices and stir well to combine.
Place cocktail rye on a baking sheet and top each slice with a heaping teaspoon of the topping.
Bake at 400°F for 10 to 12 minutes, or until lightly browned.
