Jalapeno Pesto
This recipe is adapted from the first wine lover's mystery, Murder Uncorked, by Michele Scott. The story is light-hearted and a shade on the silly side, but the recipes embedded in the novel are wonderful.
Ingredients
1/2 cup (packed) fresh basil leaves
1/2 cup (packed) fresh cilantro leaves
2 to 3 jalapeno peppers
3/4 cup plain dry bread crumbs
1/4 cup freshly grated Parmesan cheese
1/4 cup water
1 tablespoon fresh lemon juice
2 cloves garlic
1/4 cup (1/2 stick) butter, room temperature
salt and freshly ground pepper, to taste
Instructions
Combine basil, cilantro, jalapeños, breadcrumbs, cheese, water, lemon juice, and garlic in food processor. Blend until finely chopped and well mixed. Add butter and process until a smooth paste forms. Season pesto to taste with salt and pepper.
