Asian Cabbage Slaw

This recipe comes from Houston chef Robert Del Grande, owner of Café Annie.

It is my new favorite slaw, with an unexpected zing from fresh lime juice, ginger, and jalapeño. Plain, ol’ coleslaw will seem boring and mundane once you try this one. I like it served with a dollop of Spicy Peanut Sauce on top for extra heat.

Ingredients

2 tablespoons fresh lime juice
2 tablespoons peanut or light olive oil
2 tablespoons chopped fresh cilantro
2 tablespoons minced fresh ginger
1 jalapeno pepper, seeded and finely chopped
2 tablespoons unsalted roasted peanuts, coarsely chopped
4 scallions, thinly sliced
1/2 teaspoon salt
1/4 large head green cabbage, finely shredded along the grain

Instructions

In a bowl, combine all the ingredients except the cabbage and mix well. Add the cabbage and lightly toss to coat the leaves.
