Fireman Joe's Jalapeno Popcorn

My fireman friend Joe Hand recently shared his secret recipe for the ultimate movie munchies. His novel twist on a basic recipe is innovative and addictive, and his technique is flawless.

A fresh jalapeño (or serrano) pepper adds some unexpected heat without overpowering the popcorn. If you find yourself craving even hotter handfuls, just add another pepper. The bonus of this technique is that it makes a fluffy batch of popcorn with no old maids.

Ingredients

Popcorn
1 fresh jalapeno, thinly sliced
Vegetable oil
Salt

Instructions

Cover the bottom of a large stockpot with popcorn. Add just enough vegetable oil to cover the kernels, then add one jalapeño, thinly sliced. Cover the pot and place over high heat until the first kernel pops. Remove the pot from the heat and swirl it around to evenly distibute the hot oil and bring the unpopped kernels up to temperature. Return to high heat and listen while the kernels erupt in a popping frenzy.

Remove popcorn from heat when the kernels stop popping and pour into a large bowl. Season liberally with salt. Enjoy!
