Grilled Mushrooms and Leeks
The combination of mushrooms and onions is always good. This recipe takes this pairing to the next level, using leeks instead of ordinary onions and carmelizing the vegetables over an open flame.
Ingredients
2 leeks, trimmed and washed well
1 1/2 pounds buttons mushrooms
2 tablespoons olive oil
salt and pepper to taste
1 tablespoon Parmesan cheese, grated
Instructions
Preheat barbeque to high.
Quarter leeks lengthwise and cut into 1-inch segments. Toss leeks with 1 tablespoon olive oil. Season with salt and pepper. Place in hot cast iron skillet, and set skillet over medium-high heat on the grill. Cook for approximately 15 minutes, stirring frequently.
Toss mushrooms with 1 tablespoon olive oil. Season with salt and pepper. Add to leeks in wok; cook for an additional 10 minutes, until mushrooms are tender and leeks are slightly charred.
Transfer to serving bowl and dust with grated Parmesan.
