Cilantro Lime Rice
Rice is a staple in our household. This recipe livens up basic white rice with the subtle flavor of garlic and the tangy freshness of cilantro and lime. The cool flavors make it a great side for spicy dishes.
Ingredients
1 tablespoon olive oil
3 large cloves garlic, thinly sliced
1 cups white rice
2 cups water
2 tablespoons fresh lime juice
1 teaspoon kosher salt
1/4 cup minced fresh cilantro
2 tablespoons lime zest
Instructions
Heat oil in saucepan over medium-high heat. Add garlic, and sauté until golden brown, about 3 minutes. Stir in rice. Make sure it is well coated in the oil. Sauté until golden brown and shiny, about 2 minutes.
Add water, lime juice, and salt. Bring to a boil. Cover, reduce heat to low, and simmer 20 minutes, or until water is absorbed. Allow rice to rest, covered, for 10 minutes, then fluff with a fork. Stir in cilantro and lime zest. (I like to zest the lime with the original Microplane® rasp, but the Microplane® zester grater with handle works equally well... it’s just not as industrial.)
Serve steaming hot.
