Perfect soft-boiled eggs

My grandfather ate a soft-boiled egg for breakfast nearly every day. Growing up, I couldn't quite handle the runny yolk of a soft-boiled egg, but now I find it a creamy delight. Though people rarely use them anymore, egg timers were invented for the perfect 3-minute egg.

Bring a pot of water to a boil, and gently place room-temperature eggs in the water. Immediately reduce the heat, and simmer for 3 minutes. Using a slotted spoon, remove the eggs from the pot and place each egg in an individual egg cup. (In lieu of an egg cup, a plain old shot glass works like a charm.) Let rest for a few minutes to let the yolk set, then cut off the top using an egg-topper and eat with a small spoon.

Corn tortillas are especially good dipped in the creamy yolk!

Note: Increase cooking time to 5 minutes if the eggs come straight from the refrigerator.
